Pablo Neruda once wrote, “I want to do with you what spring does with the cherry trees”.

The blossoming of the cherry tree in spring is indeed an enchanting delight for the eyes.

In Japan, where cherries are actually considered a sacred fruit, there is a custom known as Hanami, according to which the Japanese go to the places where the cherry trees bloom to admire their splendour.

In addition to the beauty of its white flowers, in the months of May and June, the cherry tree gives life to one of the most delicious fruits around, loved by all: the cherry.

This fruit can come from two different botanical species: the sweet cherry tree, known as Prunus avium, and the sour cherry tree, known as Prunus cerasus.

The sweet cherry tree produces the cherries that we usually eat as fresh fruit, which are divided into two subcategories: the clingstones, which are larger with firm flesh, and the freestones, which are smaller with fairly soft flesh.

The sour cherry, on the other hand, produces three subfamilies: Amarena cherries, sour cherries and morello cherries.

Also, the presence of a good amount of natural melatonin promotes sleep and regulates the sleep cycle; its antioxidants combat free radicals, lower cholesterol and generate benefits for the heart and circulatory system in general. Finally, its satiating properties and low calorie content can prove to be an excellent counterbalance when these delicious cherries can be unbelievably moreish…
